Apple Walnut Cake
Ingredients
• 2 cups (250g) all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon powder
• ¼ tsp nutmeg
• ¼ tsp salt
• ½ cup (120ml) vegetable oil or melted butter
• ¾ cup (150g) brown sugar
• 2 large eggs
• ½ cup (120ml) milk or buttermilk
• 1 tsp vanilla extract
• 1½ cups (180g) peeled and finely chopped apples (about 2 medium apples)
• ¾ cup (80g) chopped walnuts
• 2 tbsp honey or maple syrup (optional, for extra moisture)
Instructions
Preheat your oven to 170°C (340°F). Grease and line a loaf pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In another bowl, whisk oil, brown sugar, and eggs until smooth. Add milk, vanilla extract, and honey if using. Mix until well combined.
Gently fold the dry ingredients into the wet mixture until just combined. Add the chopped apples and walnuts, and stir until evenly distributed — do not overmix.
Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few chopped walnuts on top for crunch.
Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
