STRAWBERRY DREAM CAKE
(Three Layers + Strawberry Cream Frosting)
INGREDIENTS
- For the Strawberry Cake
- 2 ½ cups (310 g) all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups (300 g) granulated sugar
- ½ cup (115 g) unsalted butter, softened
- ½ cup (120 ml) neutral oil (sunflower or canola)
- 4 large eggs, room temperature
- 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tbsp vinegar)
- ½ cup (120 ml) strawberry purée (fresh or frozen strawberries blended)
- 1 tbsp strawberry extract (optional but boosts flavor)
- Pink or strawberry-colored food gel (optional)
- For the Strawberry Cream Frosting
- 1 ½ cups (340 g) unsalted butter, softened
- 4 cups (500 g) powdered sugar
- ¼ cup (60 ml) strawberry purée, strained (no seeds)
- 1 tsp vanilla extract
- Pinch of salt
INSTRUCTIONS
1️⃣ Make the Strawberry Cake
1. Preheat oven to 175°C (350°F). Grease and line three 8-inch (20 cm) pans.
2. In a bowl, whisk flour, baking powder, baking soda, and salt.
3. In another large bowl, beat sugar + butter until fluffy (2–3 minutes).
4. Add oil and beat again.
5. Add eggs one at a time, mixing well.
6. Add strawberry purée + strawberry extract. Mix to combine.
7. Add the dry ingredients and buttermilk alternately, starting and ending with flour.
8. Add a few drops of pink food gel if you want a brighter color.
9. Divide batter into the 3 pans.
10. Bake 22–28 minutes, or until a toothpick comes out clean.
11. Cool completely.
2️⃣ Make the Strawberry Frosting
1. Beat butter until creamy and pale (3–5 minutes).
2. Add powdered sugar gradually.
3. Add strawberry purée + vanilla + pinch of salt.
4. Beat 2–3 minutes until light and fluffy.
5. If frosting is too soft: refrigerate 10 minutes.
3️⃣ Assemble the Cake
1. Level the cake layers if needed.
2. Place the first layer → spread frosting.
3. Add second layer → frost.
4. Add third layer → frost top and sides.
5. Pipe rosettes or decorations around the edges.
🍓 Tips for Best Strawberry Flavor
Reduce strawberry purée on the stove to intensify taste.
Use strawberry extract for stronger aroma.
Add freeze-dried strawberry powder if available.
