3-Ingredient Flourless Sugar-Free Yogurt Cake
Ingredients
- 3 large eggs
- 400 g plain yogurt
- (Greek yogurt or regular — unsweetened)
- 40 g cornstarch (≈ 5 tbsp)
- (Optional but recommended: a little vanilla or lemon zest for flavor.)
Instructions
1. Prepare the eggs
Separate the egg whites and yolks into two bowls.
Beat the egg whites until stiff peaks form (meringue).
2. Mix the base
In another bowl, whisk together:
Egg yolks
Yogurt
Cornstarch
Mix until completely smooth.
3. Fold gently
Add the meringue in 3 parts, gently folding with a spatula.
Do NOT overmix — keep it airy.
4. Bake
Pour into a lined round pan (18–20 cm).
Bake at:
170°C (340°F) for 30 minutes, then
Turn off the oven and leave inside 10 minutes
Then open the oven door slightly for another 10 minutes
(prevents collapse)
5. Cool
Let cool fully.
Dust with powdered sweetener if desired.

No sugar, no flour, no oil
