Strawberry and Cream Cake

Ingredients

📌 For the Cake

• 3 cups flour (375 g)

• 1.5 cups sugar (300 g)

• 1 cup unsalted butter (226 g), at room temperature

• 4 large eggs

 • 1 cup milk (240 ml)

    • 1 cup fresh strawberry puree (blend in a blender)

    • 2 teaspoons baking powder

    • 1/2 teaspoon baking soda

    • A pinch of salt

    • 1/4 cup vegetable oil (60 ml)

 • 1 tablespoon vanilla extract

    • Pink/red food coloring (optional)

🍓 For the Strawberry Filling

    • 1.5 cups chopped fresh strawberries

    • 1/4 cup sugar (50 g)

    • 1 tablespoon cornstarch

 • 1 tablespoon lemon juice

    • 2 tablespoons water

🍦 For the Creamy Topping

    • 2 cups cold whipped cream (480 ml)

    • 1/2 cup powdered sugar (60 g)

    • 1 teaspoon vanilla

 • 2 tablespoons strawberry puree or strawberry powder (optional)

Preparation

1️⃣ Cake Batter

    1. Beat softened butter and sugar with a mixer until light in color and fluffy.

    2. Continue mixing, adding eggs one at a time.

 3. Then add the oil, vanilla, and strawberry puree and beat until completely combined.

4. In a separate bowl, mix the flour, baking powder, baking soda, and salt.

5. Add the dry mixture to the wet mixture in 3 stages, alternating with milk. Obtain a smooth pink dough.

 6. If you want a brighter color, you can add a small amount of food coloring.

2️⃣ Baking

    1. Grease three 20 cm (8 inch) cake pans and line the bottoms with parchment paper.

    2. Divide the batter evenly among the pans.

 3. Bake in a preheated 170°C oven until the cakes spring back when touched and a toothpick comes out clean.

    4. Let the cakes cool completely.

3️⃣ Strawberry Filling

    1. In a small saucepan, combine the strawberries, sugar, lemon juice, water, and cornstarch.

 2. Cook over medium-low heat until the mixture thickens and becomes jam-like.

    3. Cool completely at room temperature.

4️⃣ Creamy Frosting

    1. Whip the cold cream, powdered sugar, and vanilla until stiff peaks form.

 2. If desired, add 2 tablespoons of strawberry puree to give it a light pink color.

5️⃣ Assembling the Cake

    1. Place the first cake layer on a serving stand.

    2. Spread a thin layer of whipped cream on top.

    3. Add a layer of strawberry filling and smooth it out.

 4. Add the second layer and repeat the same steps.

    5. Place the final layer and cover the entire cake with cream.

    6. Decorate the top with fresh strawberries or cream using a piping bag.
