Baked Cheesecake with Blueberry Sauce
This classic baked cheesecake offers a true bakery-style taste with its creamy, smooth texture combined with a sweet-tart blueberry sauce. With its buttery graham cracker crust and silky cream, it's the perfect choice for holidays, birthdays, or special occasions.
Ingredients
For the Crust
• 1 ½ cups graham cracker crumbs
• ¼ cup granulated sugar
• 6 tbsp unsalted butter, melted
For the Cheesecake Filling
• 24 oz (3 blocks) cream cheese, softened
• 1 cup granulated sugar
• 1 cup sour cream
• 3 large eggs, room temperature
• 2 tsp vanilla extract
• 1 tbsp lemon juice
• Zest of 1 lemon (optional)
For the Blueberry Sauce
• 2 cups fresh or frozen blueberries
• ½ cup sugar
• 2 tbsp lemon juice
• 1 tbsp cornstarch mixed with 1 tbsp water
• 1 tsp vanilla extract
Instructions
1️⃣ Make the Crust
1. Preheat oven to 325°F (160°C).
2. Mix graham cracker crumbs, sugar, and melted butter until combined.
3. Press firmly into the bottom of a 9-inch springform pan.
4. Bake 8 minutes, then let cool slightly.
2️⃣ Make the Filling
1. Beat cream cheese until smooth.
2. Add sugar and beat again until creamy.
3. Mix in sour cream, lemon juice, and vanilla.
4. Add eggs one at a time, mixing gently to avoid over-incorporating air.
5. Pour filling over the baked crust.
3️⃣ Bake the Cheesecake
1. Place the springform pan in a larger roasting pan.
2. Pour hot water into the roasting pan to create a water bath (prevents cracking).
3. Bake 55–65 minutes, until edges are set and center is slightly jiggly.
4. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
5. Chill in the refrigerator for at least 4 hours (overnight is best).
4️⃣ Make the Blueberry Sauce
1. In a saucepan, combine blueberries, sugar, and lemon juice.
2. Cook over medium heat until berries release their juices.
3. Stir in cornstarch slurry and simmer until thickened.
4. Remove from heat, stir in vanilla, and cool completely.
5. Spoon sauce over chilled cheesecake before serving.
