RED VELVET COOKIE DOUGH CHEESECAKE
Ingredients
- Cookie Dough Layer (Edible & Safe)
- 1 cup all-purpose flour (heat-treated)
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup white sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- Pinch of salt
- 1 cup chocolate chips
- Red Velvet Crust
- 2 cups crushed red velvet cookies (or Oreos)
- 5 tbsp melted butter
- Cheesecake Filling
- 24 oz (680 g) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- Red gel food coloring
- Topping
- Whipped cream
- Extra cookie dough bites
- Red velvet crumbs
Instructions
1. Make Cookie Dough
Heat-treat flour (microwave 1 minute).
Beat butter + sugars.
Add vanilla + milk.
Mix in flour + salt.
Fold in chocolate chips.
Roll into small chunks; freeze 10–15 minutes.
2. Make Red Velvet Crust
Mix cookie crumbs + melted butter.
Press into a springform pan.
Bake 10 minutes at 350°F / 175°C.
3. Make Cheesecake Filling
Beat cream cheese + sugar until smooth.
Add eggs one at a time.
Mix in sour cream, cocoa powder, vanilla, and food coloring.
Fold in half the cookie dough chunks.
4. Bake
Pour filling over crust.
Add extra cookie dough on top.
Bake 55–65 minutes at 300°F / 150°C.
Cool completely, then chill 6 hours or overnight.
5. Decorate
Top with whipped cream, cookie dough bites, and red velvet crumbs.
