Chocolate Madeleines

Ingredients

  • 100 g dark chocolate
  • 100 g butter
  • 2 eggs
  • 100 g sugar
  • 100 g flour
  • 1/2 packet of baking powder
  • A pinch of salt

Preparation

1. Melt the chocolate with the butter in a double boiler or in the microwave. Let it cool slightly.

2. In a mixing bowl, beat the eggs with the sugar until the mixture becomes pale and fluffy.

3. Add the melted chocolate, then incorporate the flour, baking powder, and salt. Mix until you obtain a smooth batter.

4. Let the batter rest in the refrigerator for at least 1 hour (this helps create the characteristic bump on the madeleines).

5. Preheat the oven to 180°C (356°F).

6. Fill the madeleine molds three-quarters full with the batter.

7. Bake for 10 to 12 minutes, until the madeleines are nicely risen and slightly golden.

8. Let them cool before removing from the molds.

Tip

For extra indulgence, you can add chocolate chips or a soft, molten center.
