Best Soft Christmas Cookies

Ingredients (Soft Cookie Dough)

  • All-purpose flour • 2¾ cups (340g)
  • Unsalted butter (soft) • 1 cup (225g)
  • Granulated sugar • 1 cup (200g)
  • Eggs • 1 large
  • Egg yolk • 1
  • Vanilla extract • 2 teaspoons
  • Cornstarch • 2 tablespoons (16g)
  • Baking powder • 1 teaspoon
  • Salt • ¼ teaspoon
  • Milk • 2 tablespoons (30ml)

  • Ingredients (Simple Christmas Icing – Optional)

  • Powdered sugar • 1½ cups (180g)
  • Milk or water • 2–3 tablespoons
  • Vanilla • ½ teaspoon
  • Food colors (red, green, white)

Instructions

Butter and sugar are creamed together until light and fluffy. Egg and egg yolk are mixed in followed by vanilla. Flour, cornstarch, baking powder, and salt are added and folded gently to form a soft dough. Milk is added to keep the dough tender. Dough is chilled for 20–30 minutes so the cookies hold their shape.

Dough is scooped or rolled into balls and flattened slightly for soft cookies. Cookies are baked at 175°C until the edges look set but still pale; they stay soft as they cool. If using icing, powdered sugar is mixed with milk and vanilla and tinted with festive colors. Cookies are decorated once completely cool.

Cookies come out soft, buttery, thick and perfect for Christmas boxes.
