Red Velvet Cheesecake Layer Cake

Ingredients:

  • For the cheesecake layer:

  • 16 oz (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

  • For the red velvet cake layers:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1 teaspoon salt
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 teaspoons white vinegar
  • 2 teaspoons vanilla extract
  • 2 tablespoons red food coloring

  • For the cream cheese frosting:

  • 16 oz (450g) cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Make the Cheesecake Layer

Preheat oven to 325°F (160°C).

Line an 8-inch round cake pan with parchment paper.

Beat cream cheese, sugar, and flour until smooth. Add eggs, sour cream, and vanilla; mix until creamy.

Pour into pan and bake for 40–45 minutes, or until center is set. Cool completely, then freeze for at least 1 hour (this makes it easier to stack later).

Step 2: Make the Red Velvet Cake

Increase oven temperature to 350°F (175°C).

Grease and line two 8-inch round pans.

In a bowl, whisk together flour, sugar, cocoa, baking soda, and salt.

In another bowl, mix oil, buttermilk, eggs, vinegar, vanilla, and food coloring.

Combine wet and dry ingredients until smooth.

Divide batter evenly between pans and bake for 25–30 minutes. Cool completely.

Step 3: Make the Frosting

Beat cream cheese and butter until fluffy.

Add vanilla and gradually beat in powdered sugar until smooth.

Step 4: Assemble the Cake

Place one red velvet cake layer on a serving plate.

Add the chilled cheesecake layer on top.

Top with the second red velvet cake layer.

Frost the entire cake with cream cheese frosting.

Chill for 1 hour before slicing for clean, even layers.
