Strawberry Shortcake Layer Cake

You Will Need:

For the Cake:

 • 2 1/2 cups all-purpose flour

 • 2 tsp baking powder

 • 1/2 tsp salt

 • 1 cup unsalted butter (softened)

 • 1 1/2 cups granulated sugar

 • 4 large eggs (room temperature)

 • 1 tsp vanilla extract

 • 1 cup whole milk

For the Whipped Cream Filling:

 • 2 cups heavy cream

 • 1/4 cup powdered sugar

 • 1 tsp vanilla extract

For the Strawberry Buttercream:

 • 1 1/2 cups unsalted butter (softened)

 • 4 cups powdered sugar

 • 1/4 cup pureed strawberries (strained to remove seeds)

 • 1 tsp vanilla extract

For Assembly:

 • 2 cups fresh strawberries (sliced)

 • Additional whole strawberries and mixed berries for garnish

Instructions:

1. Bake the Cake:

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla. Gradually add the flour mixture, alternating with the milk, until well combined. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.

2. Make the Whipped Cream Filling:

In a large chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Set aside.

3. Prepare the Strawberry Buttercream:

In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the pureed strawberries and vanilla extract, and beat until smooth and fluffy.

4. Assemble the Cake:

Place one layer of cake on a serving plate. Spread a generous layer of whipped cream on top and cover with a layer of fresh strawberry slices. Repeat with the next layer. Place the final layer on top and frost the entire cake with the strawberry buttercream.

5. Decorate:

Garnish the cake with whole strawberries and mixed berries. Dust with powdered sugar for an extra touch of elegance.
