Raspberry & Cocoa Chocolate Treat

Ingredients:

  • 1 ½ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 🧈 ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 🥚 2 large eggs
  • 🍃 1 teaspoon vanilla extract
  • 🥛 ½ cup buttermilk
  • 1 ½ cups fresh raspberries
  • 🍫 ½ cup dark chocolate chips

Directions:

1️⃣ Preheat and Prepare:

Preheat your oven to 350°F (175°C).

Grease and flour an 8-inch round cake pan or line it with parchment paper.

2️⃣ Mix Dry Ingredients:

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Set this mixture aside.

3️⃣ Cream Butter and Sugar:

In a large mixing bowl, beat the butter and sugar together using an electric mixer. Beat until the mixture is light and fluffy (about 3 minutes).

4️⃣ Add Eggs and Vanilla:

Add the eggs, one at a time, beating well after each addition.

Stir in the vanilla extract.

5️⃣ Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the butter mixture in three batches, alternating with the buttermilk. Start and end with the dry ingredients.

Mix until just combined—don’t overmix!

6️⃣ Fold in Raspberries and Chocolate Chips:

Gently fold in the raspberries and chocolate chips using a spatula. Be careful not to crush the raspberries.

7️⃣ Bake:

Pour the batter into the prepared cake pan and spread it evenly.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8️⃣ Cool and Serve:

Let the cake cool in the pan for 10 minutes.

Transfer it to a wire rack to cool completely before slicing.

Tips:

Fresh or Frozen Raspberries: You can use frozen raspberries, but don’t thaw them before adding.

Extra Moisture: For an extra moist cake, brush a simple syrup (equal parts sugar and water, boiled) over the cooled cake.
