Strawberry Cheesecake Bars

Strawberry Cheesecake Bars

Ingredients:  

- 2 cups Oreo cookie crumbs  

- 6 tbsp unsalted butter, melted  

- 16 oz cream cheese, softened  

- 1/2 cup granulated sugar  

- 2 large eggs  

- 1 tsp vanilla extract  

- 1/2 cup sour cream  

- 1 1/2 cups fresh strawberries, sliced  

- 1 cup semi-sweet chocolate chips  

- 1/2 cup heavy cream  

- Fresh strawberries for garnish  

- Blackberries for garnish  

- Shaved dark chocolate (optional)  

Directions:  

1. Start by preheating your oven to 325°F (160°C).  

2. In a mixing bowl, combine the Oreo cookie crumbs with the melted butter until everything is nicely blended. Press this mixture firmly into the bottom of a parchment-lined 9x9-inch baking pan to form a crust. Bake for 10 minutes, then let it cool completely.  

3. In a separate large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until the mixture is velvety. Pour this luscious filling over your cooled crust and spread it evenly.  

4. Bake the cheesecake in your preheated oven for 30–35 minutes, until the edges are set but the center still has a slight jiggle. Allow it to cool completely before placing it in the refrigerator for at least 4 hours (or preferably overnight).  

5. Once chilled, arrange the sliced strawberries beautifully on top of the cheesecake layer.  

6. In a small saucepan, heat the heavy cream until it’s just simmering. Pour it over the chocolate chips in a bowl and let it sit for about 2 minutes. Stir until the mixture is smooth and glossy—voilà, chocolate ganache!  

7. Drizzle the ganache over the strawberries, allowing it to cascade down the sides of the bars. Place the dessert back in the fridge for about 30 minutes to let the ganache set.
