Delicious Yogurt Cake: Soft and Fluffy

 Ingredients  

- 2 cups all-purpose flour  

- 1/2 cup vegetable oil  

- 1 cup granulated sugar  

- 1 cup plain yogurt (Greek or regular)  

- 2 large eggs  

- 2 teaspoons baking powder  

- 1 teaspoon vanilla extract  

- 1/2 teaspoon salt  

- Zest of 1 lemon (optional)  

 Directions  

1. Preheat the Oven:  

   Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2. Mix Wet Ingredients:  

   In a large bowl, whisk together the yogurt, sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.

3. Combine Dry Ingredients:  

   In another bowl, sift together the flour, baking powder, and salt. If using, add the lemon zest for extra flavor.

4. Mix Together:  

   Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

5. Bake:  

   Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool:  

   Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

7. Serve:  

   Dust with powdered sugar or top with fresh fruit and whipped cream if desired.
