Ingredients:
For the crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the filling:
- 24 oz (680g) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup strawberry puree
- Zest of 1 orange
- 1/4 cup orange juice
- 1 tablespoon gelatin powder
For the topping:
- 1 cup whipped cream
- Fresh strawberries, sliced
- Orange zest
Instructions:
1. For the crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
2. For the filling: In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mix until combined.
3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
4. In a small saucepan, combine strawberry puree, orange zest, and orange juice. Sprinkle gelatin powder over the mixture and let it sit for 5 minutes. Heat the mixture over low heat until the gelatin dissolves completely. Let it cool slightly.
5. Gradually pour the strawberry mixture into the cream cheese mixture, stirring gently until fully combined.
6. Pour the filling over the chilled crust, spreading it evenly. Refrigerate for at least 4 hours or until set.
7. Before serving, top the cheesecake with whipped cream, sliced strawberries, and orange zest.
