Decadent Black Forest Roll Cake

Ingredients:

  • For the Cake:

  • 6 large eggs
  • 1 cup sugar
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp vanilla extract

  • For the Filling:

  • 1 cup heavy cream
  • 2 tbsp icing sugar
  • ½ cup chopped cherries in syrup

  • For the Topping:

  • ½ cup heavy cream
  • 100g dark chocolate
  • Fresh cherries (for garnish)

Directions:

Bake the Cake: Preheat oven to 350°F (180°C). Whisk eggs and sugar until pale. Fold in flour, cocoa, and vanilla. Spread batter on a lined baking sheet and bake 12-15 mins. Roll in parchment while warm to cool.

Make the Filling: Whip cream and icing sugar until fluffy. Unroll cooled cake, spread with whipped cream, and sprinkle cherries. Roll up again.

Ganache Topping: Heat cream, pour over chocolate, and stir until smooth. Drizzle over the roll and garnish with fresh cherries.
