Heavenly Exotic Fruit Cupcakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whipped cream
  • 1/2 cup diced pineapple
  • 1/4 cup diced peaches
  • 1/4 cup diced bananas
  • 1/4 cup maraschino cherries, halved

Directions:

Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture.

Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.

Once cooled, top each cupcake with a generous dollop of whipped cream.

Arrange the diced pineapple, peaches, bananas, and maraschino cherries on top of the whipped cream for a colorful and tropical topping.
