Decadent Flourless Chocolate Peanut Butter Cake
This rich and gluten-free cake is a perfect combination of chocolate and peanut butter, making it an incredibly indulgent treat.
Ingredients:
- For the Cake:
- 1 cup unsalted butter
- 1 1/2 cups semi-sweet chocolate, chopped (or chocolate chips)
- 6 eggs
- 1 cup sugar
- 1 tablespoon vanilla extract
- 3/4 cup cocoa powder (mix of Dutch process and regular)
- 1 teaspoon salt
- For the Peanut Butter Buttercream:
- 1 cup creamy peanut butter
- 1 cup unsalted butter, softened
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 4 cups powdered sugar
- 4-6 tablespoons heavy cream
- For the Ganache (optional):
- 2 cups semi-sweet chocolate, chopped (or chocolate chips)
- 1/2 cup unsalted butter
Instructions:
Preheat the oven to 350°F (175°C). Grease and line an 8-inch springform pan.
Prepare the cake: Melt the butter and chocolate together in a double boiler or microwave until smooth.
In a separate bowl, whisk together the eggs, sugar, and vanilla extract until light and fluffy.
Sift the cocoa powder and salt into the egg mixture and fold it in gently.
Slowly fold the melted chocolate mixture into the egg mixture until just combined.
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out with moist crumbs.
While the cake cools, prepare the peanut butter buttercream: Cream together the peanut butter, softened butter, salt, and vanilla extract until smooth. Gradually add the powdered sugar and beat until light and fluffy. If the frosting is too stiff, add heavy cream one tablespoon at a time until desired consistency is reached.
Once the cake is cool, spread the peanut butter buttercream frosting over the top.
For the ganache (optional): Heat the heavy cream in a saucepan until simmering. Pour the hot cream over the chopped chocolate and let it sit for a few minutes. Whisk until smooth and glossy. Pour the ganache over the frosted cake, letting it drip down the sides.
Refrigerate the cake for at least 2 hours before serving. Enjoy!💜💜
