Chocolate Cheesecake Layer Cake

Ingredients

For the chocolate cake

 * 2 cups all-purpose flour

 * 1 3/4 cups granulated sugar

 * 3/4 cup unsweetened cocoa powder

 * 2 teaspoons baking soda

 * 1 teaspoon baking powder

 * 1 teaspoon salt

 * 1 cup buttermilk

 * 1/2 cup vegetable oil

 * 2 large eggs

 * 1 tablespoon vanilla extract

 * 1 cup strong brewed coffee, hot

For the cheesecake layer

 * 8 ounces cream cheese, softened

 * 1/4 cup granulated sugar

 * 1 large egg

 * 1 teaspoon vanilla extract

 * Pinch of salt

For the chocolate ganache

 * 1 cup heavy cream

 * 1 1/2 cups semi-sweet chocolate chips

For the chocolate frosting

 * 1 cup unsalted butter, softened

 * 2 1/2 cups powdered sugar

 * 1 cup unsweetened cocoa powder

 * 1/2 cup heavy cream

 * 1 teaspoon vanilla extract

 * Pinch of salt

Preparation

 * Make the chocolate cake layers. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed until well combined. Gradually pour in the hot coffee and mix until the batter is smooth. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

 * Prepare the cheesecake layer. Reduce the oven temperature to 325°F (160°C). In a medium bowl, beat the cream cheese and sugar until smooth. Beat in the egg, vanilla, and salt until just combined. Pour the mixture into a parchment-lined 9-inch round cake pan. Bake for 25-30 minutes, or until the center is set. Let it cool completely.

 * Make the chocolate frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, cocoa powder, heavy cream, vanilla, and salt. Beat on high speed until the frosting is light and fluffy.

 * Assemble the cake. Place one chocolate cake layer on a serving plate. Top it with the cooled cheesecake layer. Spread a thick layer of chocolate frosting over the cheesecake. Place the second chocolate cake layer on top. Cover the entire cake with the remaining chocolate frosting.

 * Prepare the chocolate ganache. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 5 minutes, then whisk until smooth. Drizzle the warm ganache over the top of the cake, allowing it to drip down the sides.
