Ingredients:

  • For the Cookie Dough:

  • 1 1/4 cups butter, room temperature 🧈
  • 1 1/4 cups dark brown sugar 🍂
  • 1/2 cup sugar 🍬
  • 3/4 cup peanut butter 🥜
  • 3 tsp vanilla extract 🌟
  • 2 1/2 cups all-purpose flour (heat-treated) 🌾
  • 3-4 tbsp milk 🥛
  • 1 cup semi-sweet chocolate chips 🍫

  • For the Chocolate Ganache:

  • 12 oz semi-sweet chocolate chips 🍫
  • 1 cup heavy whipping cream 🥛

  • For the Peanut Butter Frosting:

  • 1/4 cup butter 🧈
  • 1/4 cup shortening 🥄
  • 1/2 cup peanut butter 🥜
  • 2 cups powdered sugar 🍬
  • 1 tbsp water or milk 🥛
  • Mini chocolate chips, for topping (optional) 🍫

Instructions:

To Make the Brownies: 1️⃣ Preheat Oven: Preheat your oven to 350°F (175°C). Line the bottoms of three 8-inch cake pans with parchment paper and grease the sides.

2️⃣ Mix Ingredients: In a large bowl, mix together vegetable oil, sugar, and vanilla extract. Add eggs and mix until well combined.

3️⃣ Combine Dry Ingredients: In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until well combined.

4️⃣ Bake: Divide the batter evenly among the prepared pans. Spread evenly and bake for 25-30 minutes, or until a toothpick comes out with a few crumbs. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

To Make the Cookie Dough: 1️⃣ Cream Ingredients: In a large bowl, cream together butter, dark brown sugar, and sugar until light and fluffy, about 3-4 minutes. Mix in peanut butter and vanilla extract.

2️⃣ Add Flour and Milk: With the mixer on low speed, gradually add flour. Add milk 1 tablespoon at a time to reach your desired thickness. Stir in chocolate chips. Set aside.

To Assemble the Cake: 1️⃣ Prepare Ganache: Place half of the chocolate chips in a metal bowl. Heat half of the heavy cream until it starts to boil. Pour over the chocolate chips and cover with plastic wrap. Let sit for 5-7 minutes, then whisk until smooth.

2️⃣ Layer Cake: Line one of the cake pans with parchment paper. Place the first brownie layer into the pan. Spread about 3 tablespoons of chocolate ganache on top. Spread half of the cookie dough over the ganache.

3️⃣ Stack Layers: Remove the first layer from the pan and place it on a serving dish. Repeat with the second brownie layer and the remaining cookie dough. Add another 3 tablespoons of ganache on top of the cookie dough layer, then place the second layer on top of the first.

4️⃣ Finish Layering: Spread 3 more tablespoons of ganache on top of the cookie dough, then place the final brownie layer on top.

To Finish the Cake: 1️⃣ Prepare Final Ganache: Heat the remaining chocolate chips and heavy cream as before. Allow to cool slightly until it begins to thicken, then pour over the top of the cake.

2️⃣ Chill and Frost: Refrigerate the cake while you make the peanut butter frosting.

3️⃣ Make Frosting: Beat together butter and shortening until smooth. Add peanut butter and mix until well combined. Gradually add powdered sugar, then mix in water or milk until smooth.

4️⃣ Decorate: Once the cake is set, pipe the peanut butter frosting around the edges and sprinkle with mini chocolate chips, if desired.
