🛒 Ingredients:
For the Chocolate Sponge Cake:
* 2 cups all-purpose flour
* 2 cups granulated sugar
* ¾ cup unsweetened cocoa powder
* 2 tsp baking powder
* 1 ½ tsp baking soda
* 1 tsp salt
* 2 large eggs (at room temperature)
* 1 cup whole milk
* ½ cup vegetable oil
* 2 tsp vanilla extract
* 1 cup boiling water (or hot coffee to enhance the chocolate flavor!)
For the Rich Chocolate Frosting & Assembly:
* 1 ½ cups (3 sticks) unsalted butter, softened
* 1 cup unsweetened cocoa powder
* 4-5 cups powdered sugar
* ⅓ cup heavy whipping cream
* 2 tsp vanilla extract
* Fresh cherries with stems (for topping)
* Dark chocolate chunks or blocks (for garnish)
👩🍳 Instructions:
1️⃣ Prep the Oven & Pans: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
2️⃣ Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3️⃣ Add Wet Ingredients: Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
4️⃣ Pour the Hot Water: Stir in the boiling water (or hot coffee) by hand. The batter will look very thin, but don't worry—this is the secret to the ultimate moist texture!
5️⃣ Bake: Divide the batter evenly between your prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.
6️⃣ Make the Frosting: Beat the softened butter until fluffy. Gradually add cocoa powder, powdered sugar, heavy cream, and vanilla extract. Beat until smooth, creamy, and spreadable.
7️⃣ Assemble & Decorate: Place your first cake layer down, spread a generous layer of chocolate frosting, and repeat with the next layer. Frost the top and sides. Pipe beautiful dollops of frosting around the top edge, and generously decorate with fresh stem cherries and chunky dark chocolate pieces just like the picture!
✨ Pro-Tip: Serve chilled or at room temperature with a tall glass of cold milk!
