TurkishBread (Layered Flatbread)

🛒 Ingredients:

For the Dough:

• 270g All-purpose flour

• 160g Extra-fine semolina (finot)

• 1 tbsp Active dry yeast

• 1 pinch Salt

• 290g Lukewarm water (adjust as needed)

For Layering & Folding:

• 100g Soft butter (room temperature)

• 30g Extra-fine semolina

• 15g Flour

To Serve:

• Melted butter & honey 🧈🍯

👩‍🍳 Instructions:

1️⃣ Make the Dough: In a large bowl, mix the flour, extra-fine semolina, salt, and dry yeast. Gradually pour in the lukewarm water and knead for about 10 minutes until you get a very smooth, soft, and elastic dough.

2️⃣ First Rest: Cover the dough with a clean cloth and let it rise for about 20 minutes until slightly puffed up.

3️⃣ Divide & Prepare: Divide the dough into 6 equal-sized balls. Mix the 30g of semolina and 15g of flour together in a small bowl for dusting. 4️⃣ Layering (The Secret to Flakiness!): Take one ball of dough and roll/stretch it out very thinly. Generously spread small pieces of soft butter over the surface, then lightly sprinkle with the flour-semolina mixture. Fold the edges neatly into a square or round package to create layers, then round it into a ball coated lightly with the flour-semolina mix. Repeat with the remaining dough balls and let them rest for a few minutes. 5️⃣ Cook: Heat a cast-iron skillet or heavy pan over medium heat. Gently flatten each ball with your hands into a flat disk, then place it into the pan. Cook on both sides until gorgeously golden brown and crispy.

6️⃣ Serve: Drizzle with warm melted butter and honey while still hot, grab a glass of fresh mint tea, and enjoy! 🫖🌿
