INSTRUCTIONS

Step 1: Make the Chocolate Cake Base

 * Preheat your oven to 350°F (175°C). Grease and line an 8-inch springform pan with parchment paper.

 * In a medium bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

 * Add the egg, milk, oil, and vanilla extract. Whisk until smooth.

 * Stir in the hot water (or coffee) until the batter is thin and well combined.

 * Pour into the prepared pan and bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.

 * Cool completely in the pan. (Optional: Trim top slightly if needed to create an even layer, leaving the cake at the bottom of the springform pan lined with acetate film or parchment along the inner sides).

Step 2: Prepare the Gelatin Base

 * In a small bowl, sprinkle the gelatin over 3 tbsp of cold water. Let sit for 5 minutes to bloom.

 * Microwave for 10–15 seconds until completely melted and clear. Set aside.

Step 3: Dark Chocolate Mousse Layer

 * Heat ½ cup heavy cream until hot (do not boil). Pour over chopped dark chocolate and let sit for 1 minute, then stir until smooth ganache forms.

 * Stir in 1 tsp of the warm bloomed gelatin mixture until fully incorporated. Let cool to room temperature.

 * In a separate bowl, whip another ½ cup heavy cream to soft peaks. Gently fold into the dark chocolate mixture until uniform.

 * Pour over the cooled cake base, smooth the top with a spatula, and chill in the freezer for 15 minutes to set.

Step 4: Milk Chocolate Mousse Layer

 * Repeat the exact process using milk chocolate, ½ cup heated heavy cream, 1 tsp gelatin mixture, and ½ cup whipped heavy cream.

 * Carefully pour the milk chocolate mousse over the set dark chocolate layer. Smooth the surface and chill in the freezer for another 15 minutes.

Step 5: White Chocolate Mousse Layer

 * Repeat the process using white chocolate, ½ cup heated heavy cream, the remaining gelatin mixture, and ½ cup whipped heavy cream.

 * Pour the white chocolate mousse over the set milk chocolate layer and smooth the top.

 * Refrigerate the entire cake for at least 4 hours (preferably overnight) until firm.

Step 6: Decorate & Serve

 * Run a thin knife around the edge of the pan (or gently peel off the acetate collar) to release the cake.

 * Top generously with chopped dark chocolate chunks, chocolate curls, and a fresh mint leaf.

 * Slice with a warm knife for clean, sharp layers and enjoy
