Tropical Mango & Passion Fruit Dream Cake

🛒 Ingredients

1. Light Vanilla Sponge Cake

 * 4 large eggs (room temperature)

 * 150g granulated sugar

 * 120g all-purpose flour

 * 30g cornstarch

 * 1 tsp vanilla extract

 * A pinch of salt

2. Passion Fruit Mousse & Insert

 * 350ml heavy whipping cream (chilled)

 * 150g passion fruit puree (with seeds)

 * 100g mango puree

 * 80g powdered sugar

 * 3 sheets gelatin (or 7g gelatin powder bloomed in cold water)

3. Tropical Mirror Glaze & Decoration

 * 100g mango puree

 * 50g passion fruit puree

 * 50g sugar

 * 5g gelatin sheets (or 5g powder)

 * Fresh mango slices, passion fruit, whipped cream rosettes, and edible flowers for garnish!

👩‍🍳 Step-by-Step Instructions

Step 1: Bake the Sponge Cake

 * Preheat your oven to 180°C (350°F) and line an 8-inch round baking pan with parchment paper.

 * Whip the eggs, sugar, and vanilla extract in a stand mixer on high speed for about 8–10 minutes until pale, thick, and tripled in volume.

 * Gently sift in the flour, cornstarch, and salt. Fold in with a spatula carefully so you don't deflate the batter.

 * Pour into the pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely, then slice into 2 even layers.

Step 2: Make the Passion Fruit & Mango Filling

 * Warm a small portion of the fruit purees and dissolve your bloomed gelatin into it. Mix with the remaining puree.

 * Whip the heavy cream and powdered sugar to soft peaks. Gently fold the fruit mixture into the whipped cream to create a smooth, airy tropical mousse.

 * Pour half of the mousse into an 8-inch ring mold or cake tin lined with acetate, place a sponge layer on top, add a layer of concentrated fruit puree/insert, add the second sponge, and top with the remaining mousse. Chill in the fridge for at least 4 hours (or overnight).

Step 3: The Glossy Glaze & Decor

 * Heat the mango and passion fruit purees with sugar, remove from heat, and stir in the gelatin until melted. Let it cool to lukewarm.

 * Pour the glaze evenly over your chilled, set cake.

 * Decorate: Pipe elegant whipped cream rosettes around the edge, top with a fresh fan of ripe mango slices, passion fruit seeds, mint leaves, and edible flowers for that bakery-style finish!  🍰💛
