🛒 INGREDIENTS
1. Chocolate Cake Base
* ½ cup (65g) all-purpose flour
* ¼ cup (25g) unsweetened cocoa powder
* ½ cup (100g) granulated sugar
* ½ tsp baking powder
* ¼ tsp baking soda
* ⅛ tsp salt
* 1 large egg (room temperature)
* ¼ cup (60ml) milk
* 2 tbsp vegetable oil
* 1 tsp vanilla extract
* 3 tbsp hot water (or hot brewed coffee for extra flavor!)
2. For the Mousse Layers
* 3 cups (720ml) heavy whipping cream (divided into three 1-cup portions)
* 4 oz (115g) Dark Chocolate (60–70% cacao, finely chopped)
* 4 oz (115g) Milk Chocolate (finely chopped)
* 4 oz (115g) White Chocolate (good quality, finely chopped)
* 1½ tsp powdered gelatin (divided: ½ tsp per layer)
* 3 tbsp cold water (divided: 1 tbsp per layer)
👩🍳 INSTRUCTIONS
STEP 1: Make the Cake Base
* Preheat your oven to 350°F (175°C). Grease a 8-inch or 9-inch springform pan and line the bottom with parchment paper.
* In a medium bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
* Add the egg, milk, oil, and vanilla extract. Whisk until smooth.
* Stir in the hot water (or coffee) until the batter is thin and well combined.
* Pour into your pan and bake for 13–15 minutes (a toothpick inserted in the center should come out clean).
* Cool completely in the pan.
STEP 2: Dark Chocolate Mousse (Layer 1)
* Bloom Gelatin: Sprinkle ½ tsp gelatin over 1 tbsp cold water in a small bowl. Let stand for 5 minutes.
* Melt the chopped dark chocolate in a heatproof bowl set over a pot of simmering water (or microwave in 20-second bursts), stirring until smooth. Melt the bloomed gelatin into the hot chocolate. Let cool slightly.
* Whip 1 cup of heavy cream to soft peaks.
* Gently fold ⅓ of the whipped cream into the dark chocolate mixture to lighten it, then fold in the remaining cream until smooth and uniform.
* Pour over the cooled cake base, smooth the top with a spatula, and freeze for 15–20 minutes to set.
STEP 3: Milk Chocolate Mousse (Layer 2)
* Repeat the exact same process as above using the milk chocolate, ½ tsp gelatin (bloomed in 1 tbsp cold water), and 1 cup of heavy cream.
* Pour the milk chocolate mousse gently over the chilled dark chocolate layer.
* Return to the freezer for 15–20 minutes to set.
STEP 4: White Chocolate Mousse (Layer 3)
* Repeat the process once more using the white chocolate, ½ tsp gelatin (bloomed in 1 tbsp cold water), and the final 1 cup of heavy cream.
* Pour over the milk chocolate layer and smooth out the top evenly.
STEP 5: Chill & Serve
* Cover the pan loosely with plastic wrap and refrigerate for at least 4–6 hours (overnight is best!).
* To unmold: Run a thin, sharp knife dipped in hot water around the inside rim of the pan before opening the springform latch.
* Top with cocoa powder, chocolate curls, or fresh berries! 🍓✨
💡 PRO TIPS FOR SUCCESS
* Use Real Chocolate Bars: Avoid chocolate chips for mousse if possible—baking bars melt much smoother and give a better texture.
* Gelatin Secret: The gelatin ensures clean, distinct layers when sliced, but make sure not to let your melted chocolate get too cold before folding in the cream, or it will seize.
* Hot Knife Trick: Wipe your knife clean and dip it in hot water between every slice for picture-perfect cake slices!
