Pistachio Opera Cake

1. Pistachio Joconde Sponge Cake

Ingredients:

• 3 large eggs

• 3 egg whites

• 100g icing sugar

• 50g ground almonds

• 50g ground pistachios (or pistachio flour)

• 30g all-purpose flour

• 30g pistachio paste

• 30g unsalted butter, melted

• 1 tsp vanilla extract

• A pinch of salt

Instructions:

1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the whole eggs, icing sugar, ground almonds, ground pistachios, and pistachio paste until smooth and slightly pale.

3. In a separate bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually fold one-third of the meringue into the nut mixture to lighten it, then gently fold in the remaining meringue and sifted flour.

4. Fold in the melted butter and vanilla extract.

5. Spread the batter evenly onto the prepared baking sheet and bake for 12 to 15 minutes until lightly golden and springy. Allow it to cool completely, then cut it into uniform rectangular layers.

2. Sugar Syrup (Soaking Syrup)

Ingredients:

• 100ml water

• 80g granulated sugar

• 1 tsp rose water or vanilla extract

Instructions:

1. Combine the water and sugar in a small saucepan and bring to a boil until the sugar completely dissolves.

2. Remove from heat, stir in the rose water or vanilla extract, and let it cool completely.

3. Pistachio Buttercream / Crèmeux Filling

Ingredients:

• 200g unsalted butter (softened at room temperature)

• 80g pistachio paste

• 60g icing sugar

• 1 tsp vanilla extract

Instructions:

1. Whip the softened butter in a stand mixer fitted with the whisk attachment until light, pale, and fluffy.

2. Sift in the icing sugar and add the pistachio paste and vanilla extract.

3. Beat on medium-high speed for another 3–5 minutes until smooth, airy, and well-incorporated.

4. Chocolate Ganache Layer

Ingredients:

• 150g dark or couverture chocolate (chopped)

• 120ml heavy cream

• 20g unsalted butter

Instructions:

1. Heat the heavy cream in a saucepan just until it begins to simmer.

2. Pour the hot cream over the chopped chocolate and let it sit undisturbed for 2 minutes to melt.

3. Stir gently from the center outward until completely smooth, then incorporate the butter for an extra glossy finish. Let it cool to a spreadable consistency.

5. Smooth Pistachio Glaze & Assembly

Ingredients for Glaze:

• 100g white chocolate

• 40g neutral oil (or cocoa butter)

• 30g pistachio paste

• Optional: A handful of chopped pistachios and edible gold leaf for decoration

Assembly Steps:

1. Layer 1: Place the first rectangular sheet of Pistachio Joconde sponge on a flat tray or board. Generously brush it with the cooled sugar syrup.

2. First Filling: Spread an even layer of the rich pistachio buttercream over the sponge.

3. Layer 2: Place the second sponge layer on top, press down gently, and brush with syrup.

4. Second Filling: Spread the smooth chocolate ganache evenly across this layer.

5. Top Layer: Place the final sponge layer on top, brush lightly with syrup, and press down firmly to level the cake. Chill in the refrigerator or freezer for 30 minutes to set.

6. Glaze: Melt the white chocolate with the oil and mix in the pistachio paste until smooth. Pour over the chilled cake, smoothing it evenly across the top.

7. Finish: Let the glaze set in the fridge, trim the edges cleanly with a hot knife to reveal the neat layers, and garnish with crushed pistachios, chocolate decorations, and gold leaf.
