  •  Chill Time: 30 minutes
  •  Servings: 12–16 slices

🛒 Ingredients

1. Fudgy Brownie Layers

 * 1 ½ cups vegetable oil

 * 3 cups granulated sugar

 * 3 tsp vanilla extract

 * 6 large eggs, room temperature

 * 1 ½ cups all-purpose flour

 * 1 cup unsweetened cocoa powder (or dark cocoa)

 * ¾ tsp baking powder

 * ¼ tsp salt

2. Eggless Peanut Butter Cookie Dough Filling

 * ½ cup (1 stick) unsalted butter, softened

 * ½ cup packed light brown sugar

 * ¼ cup granulated sugar

 * ¾ cup creamy peanut butter

 * 1 tsp vanilla extract

 * 1 ½ cups all-purpose flour (heat-treated for safety: microwave flour in 15-second intervals until it reaches 165°F)

 * 2–3 tbsp milk (as needed for texture)

 * 1 cup chocolate chips (semi-sweet or mini)

3. Creamy Peanut Butter Frosting & Toppings

 * ¾ cup creamy peanut butter

 * ½ cup (1 stick) unsalted butter, softened

 * 2 ½ cups powdered sugar

 * 3–4 tbsp heavy cream or milk

 * 1 tsp vanilla extract

 * Toppings: Large chocolate chips/kisses, extra melted peanut butter for drizzling, and chocolate chips around the base.

🥣 Instructions

Step 1: Bake the Brownie Layers

 * Preheat oven to 350°F (175°C). Line two or three 8-inch or 9-inch round cake pans with parchment paper and grease the sides well.

 * Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil, granulated sugar, and vanilla extract. Add the eggs one at a time, whisking thoroughly after each.

 * Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.

 * Combine & Bake: Gradually fold the dry ingredients into the wet mixture until completely smooth. Divide batter evenly between the prepared pans.

 * Bake: Bake for 22–26 minutes until a toothpick inserted into the center comes out with a few moist crumbs. Allow brownies to cool completely in the pans before removing.

Step 2: Make the Peanut Butter Cookie Dough

 * Cream Butter & Sugars: Beat the softened butter, brown sugar, and white sugar in a bowl until light and fluffy (2–3 minutes).

 * Add Peanut Butter & Vanilla: Mix in the peanut butter and vanilla until well combined.

 * Add Flour & Milk: Mix in the heat-treated flour slowly. Add 1–3 tablespoons of milk until it forms a soft, holdable cookie dough texture.

 * Fold in Chips: Fold in the 1 cup of chocolate chips. Set aside.

Step 3: Make the Peanut Butter Frosting

 * Beat the butter and peanut butter together until smooth and creamy.

 * Gradually add powdered sugar, heavy cream, and vanilla. Beat on medium-high speed for 2–3 minutes until light, fluffy, and spreadable.

Step 4: Assemble the Layer Cake

 * First Layer: Place one cooled brownie layer on your serving plate or cake stand.

 * Cookie Dough Layer: Press the peanut butter cookie dough into an even, flat disc (using a matching cake pan lined with plastic wrap makes this super easy!) and lay it on top of the first brownie layer.

 * Top Layer: Place the second brownie layer over the cookie dough layer.

 * Frost & Decorate:

   * Spread the creamy peanut butter frosting generously over the top and optionally around the sides.

   * Drizzle extra warm melted peanut butter around the edges to let it drip slightly down the sides.

   * Top with large chocolate chips/kisses, and sprinkle extra chocolate chips at the base.

 * Serve: Refrigerate for 20 minutes before slicing for the cleanest, most picture-perfect layers!
