No-Bake Pecan Pie Balls

Here is a delicious and easy recipe for No-Bake Pecan Pie Balls that captures all the sweet, nutty, and caramel-like flavors of a traditional pecan pie in a quick bite-sized treat!

No-Bake Pecan Pie Balls

Ingredients

 * Pecans: 2 cups chopped pecans (Tip: Lightly toast them at 350°F / 175°C for 7–8 minutes for an even richer, deeper flavor)

 * Graham Cracker Crumbs: 1 cup (provides that classic pie-crust crunch)

 * Brown Sugar: 3/4 cup light brown sugar, packed

 * Corn Syrup: 3/4 cup light corn syrup (acts as the binder to give it that authentic, sticky pie-filling texture)

 * Salt: 1/4 teaspoon

 * Vanilla Extract: 1 teaspoon

 * Melting Chocolate: 10 oz milk, dark, or semi-sweet melting chocolate (or chocolate almond bark) for drizzling/coating

 * Optional Garnish: Extra chopped pecans or a small pinch of sea salt for the top

Instructions

 * Mix the Dry Ingredients:

   In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, brown sugar, and salt. Stir until evenly blended.

 * Add the Wet Ingredients:

   Pour in the corn syrup and vanilla extract (and an optional splash of bourbon or rum extract if you want a kick!). Mix thoroughly with a spatula or your hands until a sticky dough forms and all the dry ingredients are fully incorporated.

 * Shape into Balls:

   Scoop out small portions (about 1 tablespoon each) and roll them firmly between your palms to form bite-sized balls. Place them on a baking sheet lined with parchment paper.

 * Chill:

   Place the baking sheet in the freezer for 45 minutes to 1 hour, or until the balls are completely firm and hold their shape.

 * Melt the Chocolate:

   Melt your chocolate in a heat-safe bowl using short 15–20 second bursts in the microwave (stirring frequently) or over a double boiler until smooth.

 * Coat and Garnish:

   Dip or drizzle the chilled balls into the melted chocolate. While the chocolate is still wet, quickly top each one with a few extra pecan pieces or a tiny pinch of sea salt.

 * Set and Store:

   Let them sit at room temperature or place them back in the fridge for a few minutes until the chocolate hardens completely. Store leftovers in an airtight container in the refrigerator.
