Martha Stewart's Double-Chocolate Cookies

 (also known as soft and chewy fudgy chocolate chunk cookies).

Martha Stewart's Double-Chocolate Cookies

Ingredients

• 1 cup all-purpose flour

• ½ cup unsweetened Dutch-process cocoa powder

• ½ tsp baking soda

• ½ tsp coarse salt

• 8 oz (½ lb) semisweet or bittersweet chocolate, finely chopped (divided into two 4 oz portions)

• 4 tbsp (½ stick) unsalted butter

• 1 ½ cups granulated sugar

• 2 large eggs, room temperature

• 1 tsp pure vanilla extract

Instructions

1. Prep the Oven & Pans: Preheat your oven to 325°F (165°C). Line two large baking sheets with parchment paper.

2. Whisk Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and coarse salt. Set aside.

3. Melt Butter & Chocolate: In a heatproof bowl set over a pot of gently simmering water (or in short 20-second bursts in the microwave), melt 4 ounces of the chopped chocolate with the 4 tablespoons of unsalted butter, stirring until smooth. Remove from heat and allow to cool slightly.

4. Mix Wet Ingredients: In a large bowl or stand mixer fitted with the paddle attachment, combine the melted chocolate mixture, sugar, eggs, and vanilla extract. Beat on medium speed until well combined and smooth.

5. Combine & Fold: Reduce speed to low and gradually mix in the dry flour mixture until just combined. Gently fold in the remaining 4 ounces of chopped chocolate chunks using a spatula.

6. Scoop & Bake: Drop rounded tablespoons of dough (or use a medium cookie scoop) onto the prepared baking sheets, spacing them about 2 inches apart.

7. Bake: Bake for 12 to 15 minutes, rotating the pans halfway through, until the tops are crackled and set around the edges but still soft in the center.

8. Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Baker's Tip

Press a few reserved chocolate chunks onto the top of each dough ball right before baking for that signature bakery-style look shown in the picture!
