⏱️ Prep time: 35 mins | Bake time: 30–35 mins | Yield: 10–12 slices

🛒 INGREDIENTS

1. Dark Chocolate Cake Layers

 * 2 cups all-purpose flour

 * 2 cups granulated sugar

 * ¾ cup dark unsweetened cocoa powder

 * 2 tsp baking soda

 * 1 tsp baking powder

 * 1 tsp salt

 * 2 large eggs (room temperature)

 * 1 cup buttermilk (or whole milk mixed with 1 tbsp lemon juice)

 * ½ cup vegetable oil or canola oil

 * 2 tsp vanilla extract

 * 1 cup hot coffee or boiling water (enhances chocolate flavor)

2. Raspberry Jam Filling

 * 1 cup seedless raspberry jam or preserves

3. Pink Raspberry Buttercream Frosting

 * 1½ cups (3 sticks) unsweetened butter, softened at room temperature

 * 4 cups powdered sugar (confectioners' sugar)

 * ⅓ cup smooth seedless raspberry puree or jam

 * 1–2 tbsp heavy cream or milk (if needed for texture)

 * 1 tsp vanilla extract

 * 1–2 drops red or pink food gel coloring (optional, for vibrant color)

4. Garnish

 * 1½ cups fresh raspberries

 * ¼ cup dark/semi-sweet chocolate chips or chocolate chunks

 * A few sprigs of fresh mint leaves

🥣 INSTRUCTIONS

Step 1: Bake the Chocolate Cake

 * Preheat your oven to 350°F (175°C). Grease and line two or three 8-inch round cake pans with parchment paper.

 * Combine dry ingredients: In a large bowl, whisk together the flour, sugar, dark cocoa powder, baking soda, baking powder, and salt.

 * Add wet ingredients: Add eggs, buttermilk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.

 * Stir in hot liquid: Slowly pour in the hot coffee (or boiling water) and mix gently. (Note: The batter will be thin, but this makes the cake extremely moist!)

 * Bake: Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes (or 22–25 mins if using 3 pans), until a toothpick inserted in the center comes out clean.

 * Cool: Allow cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

Step 2: Prepare the Raspberry Buttercream

 * In a large bowl, beat the softened butter with an electric mixer for 3–4 minutes until pale and creamy.

 * Gradually add the powdered sugar, one cup at a time, beating on low speed until combined.

 * Mix in the seedless raspberry puree/jam, vanilla extract, and a drop of pink/red food gel.

 * Whip on high speed for 2 minutes until light, fluffy, and smooth. Add a splash of heavy cream if it's too thick.

Step 3: Assemble & Decorate

 * Level the layers: Use a serrated knife to level the top of the cooled cake layers if needed.

 * Layering: Place the first chocolate cake layer on a serving plate. Pipe a thin rim of buttercream around the top outer edge to act as a dam, then spread a generous layer of raspberry jam in the center.

 * Stacking: Place the second cake layer on top (repeat if using 3 layers).

 * Frosting: Frost the top and sides of the cake with the pink raspberry buttercream using an offset spatula to create textured swoops on top.

 * Garnish: Top the cake with fresh raspberries. Arrange extra raspberries, dark chocolate chips, and fresh mint leaves on the side of the plate before slicing and serving!

💡 PRO TIPS FOR SUCCESS

 * Don't skip the hot liquid: Hot coffee blooms the cocoa powder, giving you a deep, bakery-quality dark chocolate color and flavor.

 * Make it smooth: Make sure to strain seeds out of your raspberry jam/puree for a silky buttercream texture!
