Pumpkin Spice Cream Cheese Roll Cake 🎃
Ingredients
- For the Pumpkin Sponge
- 3 large eggs
- ¾ cup granulated sugar
- ⅔ cup pumpkin puree
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ tsp pumpkin pie spice
- For the Cream Cheese Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 4 tbsp unsalted butter, softened
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- For Decoration
- ½ cup whipped cream or cream cheese frosting
- ¼ cup chopped toasted pecans
- 2 tbsp powdered sugar
- ½ tsp cinnamon
- ½ tsp pumpkin pie spice
Instructions
Preheat the oven to 375°F (190°C). Line a 10×15-inch jelly-roll pan with parchment paper.
Beat the eggs and sugar for 4–5 minutes, until thick and pale.
Mix in the pumpkin puree and vanilla.
In a separate bowl, whisk flour, baking powder, baking soda, salt, and pumpkin pie spice.
Gently fold the dry ingredients into the pumpkin mixture.
Spread evenly in the prepared pan and bake for 12–15 minutes, until the cake springs back when lightly touched.
Immediately turn the hot cake onto a clean sheet of parchment dusted with powdered sugar. Peel off the baking paper.
Roll the cake tightly while warm, starting from one short end. Let it cool completely.
Beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until creamy.
Whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
Carefully unroll the cooled cake and spread the filling evenly over the sponge.
Roll the cake tightly again into a long cylindrical Swiss roll.
Wrap and refrigerate for at least 2 hours.
Cover the outside with a thin layer of whipped cream or cream cheese frosting.
Pipe small cream swirls along the top and sprinkle lightly with powdered sugar, cinnamon, pumpkin pie spice, and toasted pecans.
Refrigerate for another 20–30 minutes, then slice and serve.
Tip: Do not overbake the sponge. A slightly soft cake is easier to roll and gives you that beautiful, moist spiral.
