Decadent Oreo Cheesecake Brownie Bars

Ingredients

Fudgy Brownie Base:

 * ½ cup (1 stick) unsalted butter, melted
 * 1 cup granulated sugar
 * 2 large eggs, room temperature
 * 1 tsp vanilla extract
 * ⅓ cup unsweetened cocoa powder
 * ½ cup all-purpose flour
 * ¼ tsp salt

Oreo Cheesecake Layer:

 * 16 oz (2 blocks) cream cheese, softened to room temperature
 * ½ cup granulated sugar
 * 2 large eggs, room temperature
 * 1 tsp vanilla extract
 * ¼ cup sour cream or heavy cream
 * 12–15 Oreo cookies, coarsely chopped

Chocolate Ganache & Topping:

 * 1 cup semi-sweet dark chocolate chips
 * ½ cup heavy cream
 * Extra chocolate chips, chocolate squares, and crushed cookies for garnish

Instructions

 * Prep the Oven & Pan: Pre-heat your oven to 350°F (175°C). Line an 8x8-inch or 9x9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Lightly grease the paper.
 * Make the Brownie Layer:
   * In a medium bowl, whisk together the melted butter and 1 cup of sugar until well combined.
   * Beat in 2 eggs and 1 tsp vanilla extract.
   * Fold in the cocoa powder, flour, and ¼ tsp salt until just combined (do not overmix).
   * Spread the brownie batter evenly into the bottom of the prepared baking pan. Bake for 12–15 minutes until partially set. Remove from the oven and set aside while making the filling.
 * Make the Oreo Cheesecake Layer:
   * In a large bowl, beat the softened cream cheese and ½ cup sugar together using a hand or stand mixer until completely smooth and creamy.
   * Add 2 eggs one at a time, mixing on low speed until just incorporated.
   * Mix in 1 tsp vanilla extract and ¼ cup sour cream (or heavy cream).
   * Gently fold in the chopped Oreo cookies with a spatula.
 * Bake the Bars:
   * Pour the cheesecake mixture over the partially baked brownie base and smooth the top evenly with a spatula.
   * Reduce oven temperature to 325°F (160°C).
   * Bake for 30–35 minutes, or until the edges are set and the center slightly jiggles when gently shaken.
   * Turn off the oven, crack the door open, and let it rest inside for 15 minutes to prevent cracking. Remove and let cool completely at room temperature, then chill in the fridge for at least 3–4 hours.
 * Make the Ganache & Decorate:
   * Heat the heavy cream in a small saucepan or microwave until steaming (not boiling). Pour over 1 cup of chocolate chips in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth and glossy.
   * Pour the ganache over the chilled cheesecake layer, spreading evenly.
   * Top immediately with chocolate bars/squares, chocolate chips, and crushed cookies while the ganache is soft.
   * Return to the refrigerator for 30 minutes to allow the ganache to set.
 * Slice & Serve: Lift the parchment paper handles to pull the block out of the pan. Use a hot, sharp knife (wiped clean between cuts) to slice into squares.
