Decadent Biscoff Cookie Butter Cheesecake
Ingredients (Serves 8-10)For the Crust:
- 1 1/2 cups (150g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
- For the Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup (120ml) sour cream
- 3/4 cup (180g) Biscoff cookie butter (smooth)
- For the Topping:
- 1/2 cup (120g) Biscoff cookie butter, melted
- 1/2 cup (50g) Biscoff cookies, crushed (for garnish)
- 1-2 whole Biscoff cookies (for garnish)
Instructions
1. Prepare the Crust:Preheat your oven to 325°F (160°C). Wrap the bottom of a 9-inch (23cm) springform pan with aluminum foil to prevent leaks.
In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
Press the mixture evenly into the bottom of the springform pan.
Bake for 8-10 minutes, then let it cool while preparing the filling.
2. Make the Cheesecake Filling:In a large bowl, beat the cream cheese and sugar with a mixer on medium speed until smooth and creamy.
Add the vanilla extract, then add the eggs one at a time, mixing well after each addition.
Mix in the sour cream until fully combined.
Divide the batter in half. Mix 3/4 cup of Biscoff cookie butter into one half of the batter.
Pour the plain cheesecake batter over the cooled crust, then dollop the Biscoff batter on top. Use a knife to swirl the two batters together for a marbled effect.
Place the springform pan in a larger baking dish. Fill the dish with hot water halfway up the sides of the springform pan to create a water bath.
Bake for 55-65 minutes, or until the edges are set but the center still jiggles slightly.
Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, or overnight.
3. Add the Topping:Once the cheesecake is chilled, drizzle the melted Biscoff cookie butter over the top.
Sprinkle with crushed Biscoff cookies and place 1-2 whole Biscoff cookies on top for garnish.
Serving Suggestion:Serve the cheesecake chilled, with a cup of coffee or tea for a rich and indulgent dessert experience.
