Cherry Cheesecake Squares 🍒🍰
Ingredients
- For the Crust
- 1½ cups graham cracker crumbs
- ¼ cup unsalted butter, melted
- 2 tbsp granulated sugar
- For the Cheesecake
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 tbsp heavy cream
- For the Cherry Topping
- 2 cups pitted cherries, fresh or frozen
- ⅓ cup granulated sugar
- 1 tbsp lemon juice
- 1½ tbsp cornstarch
- 2 tbsp water
- ½ tsp vanilla extract
- For Decoration
- Whipped cream
- Fresh cherries with stems
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
Mix graham crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
Bake the crust for 8–10 minutes and cool slightly.
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then mix in vanilla, sour cream, and heavy cream.
Pour over the crust and smooth the top.
Bake for 30–35 minutes, until the edges are set and the center has a slight jiggle.
Cool completely, then refrigerate for at least 4 hours.
For the topping, combine cherries, sugar, lemon juice, and vanilla in a saucepan. Cook for 5–7 minutes.
Mix cornstarch with water and stir into the cherries. Cook for another 1–2 minutes, until thick and glossy.
Cool the cherry topping completely.
Spread the cherry topping evenly over the chilled cheesecake.
Cut into thick squares.
Add a small whipped-cream rosette to each piece and top with a fresh cherry.
Refrigerate for 20–30 minutes before serving.
