Strawberry Cream Swiss Roll

A soft, fluffy vanilla sponge rolled around a luscious strawberry whipped-cream filling and fresh strawberries. Perfect for a beautiful dessert or afternoon treat.

Strawberry Cream Swiss Roll

🧁 Ingredients

  • For the sponge — 40 × 30 cm pan

  • 4 large eggs, room temperature
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 90 g all-purpose flour
  • 20 g cornstarch
  • 1/2 tsp baking powder
  • Pinch of salt
  • 30 ml milk
  • 25 ml vegetable oil

  • For the strawberry cream

  • 300 ml cold whipping cream
  • 60 g powdered sugar
  • 1 tsp vanilla extract
  • 150 g fresh strawberries, finely diced
  • 2 tbsp strawberry jam

  • For decoration

  • 150–200 g fresh strawberries
  • Powdered sugar
  • Optional: strawberry jam or melted white chocolate

👩‍🍳 Preparation

1. Prepare the sponge

Preheat the oven to 180°C.

Line a 40 × 30 cm baking tray with parchment paper.

Beat the eggs and sugar for 6–8 minutes, until very pale, thick and fluffy.

Add vanilla.

Sift together the flour, cornstarch, baking powder and salt. Gently fold them into the egg mixture in 2–3 additions.

Mix the milk and oil together, then gently fold them into the batter.

Spread evenly in the prepared tray.

Bake for 10–12 minutes, until lightly golden and the sponge springs back when touched.

2. Roll the sponge

Immediately remove the sponge from the tray.

Place it on a clean sheet of parchment paper lightly dusted with powdered sugar.

Carefully peel away the baking paper.

While still warm, roll the sponge tightly with the parchment paper.

Let it cool completely in the rolled position.

3. Make the strawberry cream

Whip the cold cream with powdered sugar and vanilla until medium-stiff peaks form.

Gently fold in the diced strawberries.

Warm the strawberry jam slightly if necessary so it spreads easily.

4. Assemble

Carefully unroll the cooled sponge.

Spread a thin layer of strawberry jam over the surface.

Spread the strawberry whipped cream evenly, leaving about 1–2 cm clear around the edges.

Roll the cake back up firmly, without squeezing out the filling.

Wrap in plastic film and refrigerate for at least 2 hours.

🍓 Decoration

Trim the ends for a clean finish. Dust with powdered sugar and decorate with fresh strawberries. For an elegant look, pipe small rosettes of whipped cream along the top and place strawberry slices over them.
