Gourmet Chocolate & Strawberry Cheesecake

INGREDIENTS
- For the Crust
- 250 g Oreo cookies (cream removed)
- 80 g melted butter
- For the Cheesecake Filling
- 500 g cream cheese (Philadelphia-style)
- 200 ml heavy cream (at least 30-35% FAT)
- 120 g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 180 g fresh strawberries, chopped into small pieces
- 1 tbsp cornstarch
- For the Chocolate Ganache
- 150 g dark chocolate, finely chopped
- 120 ml heavy cream
- For the Topping & Decoration
- 250 g fresh strawberries
- 1 tbsp strawberry jam (optional, for glazing the fruit)
PREPARATION
1. Prepare the Crust
Preheat your oven to 170°C (340°F).
Pulse the Oreo cookies in a food processor until fine crumbs form.
Mix the crumbs with the melted butter until fully combined.
Press the mixture firmly into the bottom of a 20 cm springform pan.
Bake for 10 minutes, then remove and let cool completely.
2. Make the Cheesecake Filling
Beat the cream cheese and sugar together until smooth and creamy.
Add the eggs one at a time, mixing gently after each addition just until combined.
Stir in the vanilla extract, heavy cream, and cornstarch.
Gently fold in the chopped strawberry pieces.
3. Bake & Chill
Pour the filling over the cooled crust.
Reduce oven temperature and bake at 160°C (320°F) for 50 to 60 minutes. The edges should be set, but the center should still have a slight wobble.
Turn off the oven, prop the door open slightly, and let the cheesecake cool inside for 1 hour.
Refrigerate for at least 6 hours, preferably overnight.
4. Prepare the Ganache
Bring the heavy cream to a simmer in a small saucepan.
Pour the hot cream over the chopped dark chocolate.
Let sit untouched for 2 minutes, then whisk until smooth and glossy.
Allow to cool slightly until lukewarm, then pour evenly over the chilled cheesecake.
5. Decorate & Serve
Arrange the fresh strawberries generously over the chocolate layer.
Gently brush the berries with warmed strawberry jam to give them a stunning, shiny finish.
Keep refrigerated until ready to serve.
