Decadent Chocolate Mousse Terrine

Decadent Chocolate Mousse Terrine

​Ingredients

  • ​1. Brownie / Cake Base
  • ​1/2 cup (115g) Unsalted butter, melted
  • ​1/2 cup (100g) Granulated sugar
  • ​1 large Egg
  • ​1 tsp Vanilla extract
  • ​1/3 cup (35g) Unsweetened cocoa powder
  • ​1/4 cup (30g) All-purpose flour
  • ​1/4 tsp Salt
  • ​2. Chocolate Mousse Layer
  • ​8 oz (225g) Bittersweet or semi-sweet chocolate (50–70% cacao), finely chopped
  • ​1 1/2 cups (360ml) Heavy cream, divided
  • ​3 tbsp Powdered sugar
  • ​1 tsp Vanilla extract
  • ​(Optional) 1 tsp Unflavored gelatin powder + 1 tbsp cold water (for extra stability)
  • ​3. Dark Chocolate Ganache Topping
  • ​4 oz (115g) Dark chocolate chips or chopped chocolate
  • ​1/2 cup (120ml) Heavy cream
  • ​4. Decoration & Garnish
  • ​1/2 cup Whipped cream (piped into rosettes)
  • ​1 cup Chocolate shavings or sprinkles (for sides)
  • ​7–8 Maraschino cherries with stems attached

​Instructions

​Step 1: Prepare the Base

​Preheat your oven to 350°F (175°C) and line the bottom of a 9x5-inch loaf pan with parchment paper.

​In a medium bowl, whisk together melted butter and sugar. Add the egg and vanilla extract; whisk until smooth.

​Fold in the cocoa powder, flour, and salt until just combined.

​Spread the batter thinly into the bottom of the prepared loaf pan.

​Bake for 12–15 minutes until set. Let it cool completely in the pan.

​Step 2: Make the Mousse

​(If using gelatin) Sprinkle gelatin over 1 tbsp of cold water in a small cup; let bloom for 5 minutes.

​In a heatproof bowl, melt the chopped chocolate with 1/2 cup of the heavy cream over a pot of simmering water (double boiler) or in 20-second microwave bursts. Stir until smooth.

​(If using gelatin) Stir the bloomed gelatin into the warm chocolate mixture until completely melted and smooth. Let cool slightly to room temperature.

​In a separate cold bowl, beat the remaining 1 cup of heavy cream, powdered sugar, and vanilla extract until medium peaks form.

​Gently fold 1/3 of the whipped cream into the chocolate mixture to lighten it, then fold in the remaining whipped cream until smooth and uniform.

​Step 3: Assemble & Chill

​Line the sides of your loaf pan with plastic wrap or parchment paper (extending over the edges for easy removal).

​Pour the chocolate mousse over the cooled brownie base, smoothing the top evenly with an offset spatula.

​Cover lightly with plastic wrap and refrigerate for at least 6 hours (overnight is best) until fully set.

​Step 4: Add Ganache & Decorate

​Make the Ganache: Heat 1/2 cup heavy cream until steaming, pour over chocolate chips, let sit for 2 minutes, then stir until glossy and smooth. Let cool slightly so it is pourable but not hot.

​Unmold the chilled terrine using the plastic/parchment handles onto a serving platter.

​Gently press chocolate shavings along the lower sides of the dessert.

​Pour the chocolate ganache over the top, letting it spread smoothly to the edges. Refrigrate for 10 minutes to set the ganache.

​Pipe swirls/rosettes of whipped cream down the center line of the top surface.

​Top each whipped cream rosette with a stemmed maraschino cherry.

​Tip for Clean Cuts: Dip a long, sharp knife in hot water and wipe it dry before making each slice!
