Cottage Cheese and Berry Muffins

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup oat flour
  • 1/3 cup honey or sweetener to taste
  • 1/2 cup chopped berries (blueberries, raspberries, or strawberries)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Step-by-step instructions

Preparation

Preheat oven to 180°C (350°F). Prepare your muffin tin using paper liners or by lightly greasing each cavity to ensure easy removal.

Moist Base

In a large bowl, whisk the eggs together with the cottage cheese until smooth. The cheese granules don't need to be completely dissolved, as they add an interesting texture, but make sure everything is well combined.

Flavor and Sweetness

Add the honey or sweetener of your choice along with the vanilla extract. Stir well to ensure the sweetness is evenly distributed.

Adding Dry Ingredients

Add the oat flour, baking powder, and a pinch of salt. Gently mix until all ingredients are combined and you have a smooth batter.

The Fruity Touch

Gently fold in the berries, especially if using fresh berries or raspberries, to prevent them from breaking and staining the batter.

Baking

Pour the batter into muffin tins. Bake for 20 to 25 minutes. They are done when they feel firm to the touch and a toothpick inserted into the center comes out clean.

Cooling

Remove from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack. This will allow any moisture to settle and prevent them from breaking when you remove them. Serving Suggestions

Presentation: You can serve them with a dollop of plain yogurt on top or a few extra fresh berries to enhance their flavor.

Variety: If you use frozen berries, there's no need to thaw them beforehand; this will help them keep their shape better during baking.

Storage Tips

Storage: Due to their cheese and fruit content, it's essential to store them in an airtight container in the refrigerator. They stay fresh for up to 4 days.

Long-term storage: You can freeze them for up to 2 weeks. To eat them, simply leave them at room temperature or warm them briefly.
