Yummy Castella Cake
Ingredients
• 1 cup bread flour (125g)
• ½ cup milk (120ml)
• ½ cup vegetable oil (120ml)
• 6 large eggs (separated)
• ¾ cup granulated sugar (150g)
• 1 tablespoon honey (21g)
• 1 teaspoon vanilla extract
• ½ teaspoon salt
Instructions
Preheat your oven to 150°C. Line a square or loaf pan with parchment paper, making sure the sides are well covered.
Warm the vegetable oil slightly (not too hot), then pour it into a bowl. Add the flour and mix until smooth.
Add the milk, egg yolks, honey, vanilla extract, and salt. Mix until the batter is smooth and silky.
In a separate bowl, whisk the egg whites until foamy. Gradually add sugar and continue whisking until soft peaks form (not too stiff).
Gently fold the egg whites into the batter in batches, being careful not to deflate the mixture. This step gives the cake its signature fluffy texture.
Pour the batter into the prepared pan and tap lightly to remove air bubbles.
Place the cake pan inside a larger pan filled with hot water (water bath method).
Bake for 60–70 minutes until the top is golden and the cake is set.
Remove from oven, let it cool slightly, then take it out of the pan.
