Vanilla Sponge Cake (8-inch pan)

🛒 Ingredients

  • 4 large eggs (room temperature)
  • 200 g sugar (1 cup)
  • 120 ml milk (½ cup)
  • 120 ml vegetable oil (½ cup)
  • 1 tsp vanilla extract
  • 220 g all-purpose flour (1¾ cups)
  • 2 tsp baking powder
  • ¼ tsp salt

👩‍🍳 Instructions

1. Prepare

Preheat oven to 180°C

Grease and line an 8-inch round cake pan

2. Beat eggs & sugar

Beat eggs + sugar with a mixer for 5–7 minutes until pale, thick, and fluffy

3. Add liquids

Mix in milk, oil, and vanilla gently

4. Add dry ingredients

Sift flour + baking powder + salt

Fold into batter gently (don’t overmix)

5. Bake

Pour into pan

Bake for 30–35 minutes

Check with a toothpick (should come out clean)

6. Cool

Let cool 10 minutes in pan, then transfer to a rack

✨ Tips for best results

Use room temperature eggs → better volume

Don’t overmix after adding flour

Tap pan lightly before baking to remove air bubbles

For extra softness: replace 20 ml milk with yogurt

🍯 Optional additions

Lemon zest for a citrus flavor

Light sugar syrup brushed on top for moisture

Dust with powdered sugar or serve with jam
