2 cups chocolate cookie crumbs
1/4 cup unsalted butter, melted

1 cup granulated sugar
3 large eggs
8 oz melted dark chocolate
1/4 cup cocoa powder
1 tsp vanilla extract

1 cup heavy cream
8 oz semi-sweet chocolate, chopped
👩🍳 Instructions
1️⃣ Prepare the crust:
Preheat oven to 350°F (175°C). Combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then let cool.
2️⃣ Make the filling:
Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Blend in melted chocolate, cocoa powder, and vanilla. Pour over the cooled crust.
3️⃣ Bake:
Bake for 55–60 minutes, until the center is almost set. Let cool completely, then refrigerate for at least 4 hours (or overnight).
4️⃣ Prepare the ganache:
Heat heavy cream until just simmering, then pour over chopped chocolate. Let sit for 2–3 minutes, then stir until smooth and glossy. Spread evenly over the chilled cheesecake.
