Soft Vanilla (or Marble) Loaf Cake

Ingredients

 • 2 cups all-purpose flour (250g)

 • 1 cup butter or margarine (250g)

 • ¾ cup sugar (150g)

 • 4 large eggs

 • ½ cup milk (120ml)

 • 1 tablespoon vanilla extract

 • 1 teaspoon baking powder

 • ½ teaspoon baking soda

 • Pinch of salt

For marble effect (optional):

 • 2 tablespoons cocoa powder (15g)

 • 2 tablespoons milk (30ml)

Instructions

Cream the butter and sugar together until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Add vanilla extract and mix.

In a separate bowl, combine flour, baking powder, baking soda, and salt.

Add the dry ingredients to the batter, alternating with milk. Mix gently until smooth.

Pour most of the batter into a lined loaf pan.

If making marble cake, mix cocoa powder and milk into the remaining batter, then swirl it into the plain batter.

Bake in a preheated oven at 170°C for 40–50 minutes or until a toothpick inserted comes out clean.

Allow to cool before slicing.
