Old Fashioned Coconut Cake

Ingredients

  • Cake

  • 3 cups all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (soft)
  • 2 cups sugar
  • 4 large eggs
  • 1 cup coconut milk
  • 1 tsp vanilla extract
  • 1 cup shredded coconut

  • Frosting

  • 1 cup unsalted butter (soft)
  • 4 cups powdered sugar
  • 2–3 tbsp coconut milk
  • 1 tsp vanilla extract
  • 1½ cups shredded coconut (for coating)

Method

1. Preheat oven to 180°C. Grease and line two 8-inch cake pans.

2. Mix flour, baking powder and salt together.

3. Cream butter and sugar until light and fluffy.

4. Add eggs one at a time, mixing well after each addition.

5. Add vanilla extract.

6. Add the flour mixture and coconut milk alternately, mixing until smooth.

7. Fold in shredded coconut.

8. Divide batter into pans and bake for 30–35 minutes or until a toothpick comes out clean.

9. Allow cakes to cool completely.

Frosting

1. Beat butter until creamy.

2. Add powdered sugar gradually.

3. Add coconut milk and vanilla, beat until smooth and fluffy.

4. Frost the cake layers and cover the outside with shredded coconut.
