Mint Chocolate Cheesecake (No-Bake Style with Layers)
🛒 Ingredients
1. Chocolate Crust
- 200 g chocolate cookies (like Oreo, crushed)
- 100 g unsalted butter (melted)
2. Mint Cheesecake Layer
- 400 g cream cheese (softened)
- 100 g powdered sugar
- 1 tsp peppermint extract
- A few drops green food coloring (optional)
- 200 ml heavy cream (whipped)
- 80 g dark chocolate (finely chopped)
3. Vanilla Cheesecake Layer
- 300 g cream cheese
- 80 g powdered sugar
- 1 tsp vanilla extract
- 150 ml whipped cream
4. Chocolate Ganache
- 150 g dark chocolate
- 120 ml heavy cream
5. Topping
- Chocolate chunks or curls
- Fresh mint leaves 🌿
- Extra chocolate drizzle
👩🍳 Instructions
Step 1: Prepare the Crust
Mix crushed cookies with melted butter.
Press firmly into the base of a springform pan.
Chill in the fridge for 20–30 minutes.
Step 2: Mint Layer
Beat cream cheese + powdered sugar until smooth.
Add peppermint extract and food coloring.
Fold in whipped cream gently.
Stir in chopped chocolate.
Spread over crust and refrigerate 30 minutes.
Step 3: Vanilla Layer
Beat cream cheese + sugar + vanilla.
Fold in whipped cream.
Spread over the mint layer evenly.
Chill for at least 2 hours (or until firm).
Step 4: Chocolate Ganache
Heat cream until hot (not boiling).
Pour over chocolate, let sit 1 minute.
Stir until smooth and glossy.
Let it cool slightly, then pour over cheesecake.
Step 5: Decorate
Add chocolate chunks and curls
Garnish with fresh mint leaves
Drizzle extra ganache for that dramatic look ✨
