Lemon cookies
Ingredients
1 cup softed butter
3/4 cup powdered sugar ( icing sugar)
2 & 1/2 cups All purpose flour
Finely grated lemon zest (from 1 lemon )
1/4 tsp salt (if you are using unsalted butter)
Instructions
1.Mix powdered sugar ,butter and the lemon zest together until light and fluffy.
2.Gradually add in the flour and mix well . (Do not add all the flour at once ).
3. Roll the dough on a floured surface . Use a rolling pin for this process .
4. Cut the dough using a cookie cutter and place the cut out dough on a baking tray (line with a baking paper).
Let the cut out cookie dough chill in the fridge for at least an hour before baking .
5. After chilling bake for at least 15 to 18 minutes at 180 degrees .
*If you are using salted butter, don’t add salt .
If you are using unsalted add the salt at the same time with the flour .
