Chocolate Drizzle Cheesecake

Ingredients:

  • For the Crust:

  • 1 1/2 cups chocolate graham cracker crumbs (or regular graham crackers, crushed)
  • 1/4 cup sugar
  • 1/2 cup melted butter

  • For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream

  • For the Chocolate Drizzle and Topping:

  • 1/2 cup semi-sweet chocolate chips (for drizzle)
  • 1/4 cup heavy cream (for drizzle)
  • Chocolate sprinkles or chopped chocolate bits (for topping)

Instructions:

Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, combine the chocolate graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then set aside to cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the sugar and beat until combined. Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract and sour cream, then pour in the heavy cream, mixing until smooth.

Bake the Cheesecake: Pour the cheesecake filling over the prepared crust in the springform pan. Tap the pan gently on the counter to remove air bubbles. Bake at 325°F for 55-60 minutes, or until the center is just set but slightly wobbly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour, then transfer to the fridge and chill for at least 4 hours or overnight.

Prepare the Chocolate Drizzle: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring after each, until smooth and melted. Let it cool slightly before drizzling over the cheesecake.

Serve: Once the cheesecake is chilled and set, drizzle the melted chocolate over the top, allowing it to drip down the sides. Sprinkle with chocolate bits or sprinkles for added texture. Cut a slice and place a knife slightly askew for a rustic look, with a few stray crumbs on the plate.
