Butterscotch Heaven Pie
Ingredients:
- 1 pre-baked graham cracker crust
- 1 cup brown sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 4 cups whole milk
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Whipped cream, for topping
- Butterscotch sauce, for drizzling
Directions:
In a medium saucepan, combine the brown sugar, cornstarch, and salt.
Gradually whisk in the milk until smooth.
Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
In a separate bowl, whisk the egg yolks. Gradually whisk in about 1 cup of the hot mixture to temper the eggs.
Return the egg mixture to the saucepan and cook for 2 minutes more, stirring constantly.
Remove from heat and stir in the butter and vanilla extract.
Pour the butterscotch filling into the pre-baked graham cracker crust.
Allow to cool to room temperature, then refrigerate for at least 4 hours or until set.
Before serving, top with whipped cream and drizzle with butterscotch sauce.
