Berry Crumble Cheesecake 

A dreamy fusion of creamy cheesecake, juicy berries, and a golden buttery crumble topping  sweet, tangy, and perfectly crisp in every bite!

Berry Crumble Cheesecake

📝 Ingredients (for one 22 cm / 9-inch cheesecake)

Crust

• 200 g digestive biscuits (or graham crackers), crushed

• 100 g unsalted butter, melted

• 2 tbsp brown sugar

Cheesecake Filling

• 450 g cream cheese, softened

• 150 g sour cream or Greek yogurt

• 100 g granulated sugar

• 2 large eggs

• 1 tsp vanilla extract

• 1 tbsp lemon juice

• 2 tbsp flour (for smooth texture)

Berry Layer

• 250 g mixed berries (fresh or frozen) — blueberries, raspberries, strawberries, blackberries

• 1 tbsp sugar

• 1 tsp cornstarch

• 1 tbsp lemon juice

Crumble Topping

• 80 g flour

• 60 g brown sugar

• 60 g cold butter, cubed

• Pinch of salt

• Optional: 2 tbsp rolled oats for extra crunch

👩‍🍳 Instructions

1. Prepare the Crust

• Mix crushed biscuits with melted butter and brown sugar.

• Press firmly into the bottom of a springform pan.

• Bake at 180°C (350°F) for 8–10 minutes. Let cool slightly.

2. Make the Berry Layer

• In a small saucepan, cook berries, sugar, cornstarch, and lemon juice over medium heat until thickened (5–7 minutes).

• Let it cool completely.

3. Prepare the Cheesecake Filling

• Beat cream cheese and sugar until smooth.

• Add eggs one at a time, then vanilla, lemon juice, sour cream, and flour. Mix until silky.

4. Assemble

• Pour half the cheesecake batter over the crust.

• Spoon half of the berry mixture over it.

• Add remaining cheesecake batter and swirl in the rest of the berries.

5. Make the Crumble

• In a bowl, rub together flour, brown sugar, salt, and cold butter until crumbly.

• Sprinkle evenly over the top of the cheesecake.

6. Bake

• Bake at 160°C (325°F) for 55–65 minutes, until the edges are set but the center jiggles slightly.

• Turn off oven, crack door open, and let it cool inside for 1 hour.

• Chill at least 4 hours (best overnight).

7. Serve

• Top with fresh berries and a light dusting of powdered sugar before serving.
