Vanilla Sponge Cake

Ingredients

 • 2½ cups all-purpose flour

 • 3 large eggs (room temperature)

 • 1 cup sugar

 • 1 cup milk

 • 1 cup vegetable oil

 • 1 tablespoon baking powder

 • 1 tablespoon lemon zest (optional)

 • 1 teaspoon vanilla powder or vanilla extract

 • A pinch of salt

Instructions

 1. Preheat the oven to 180°C (350°F). Grease and line a baking pan.

 2. In a bowl, whisk the eggs with sugar until light and fluffy.

 3. Add the oil and milk, and mix well until combined.

 4. Add vanilla and lemon zest, then mix gently.

 5. In another bowl, sift together flour, baking powder, and salt.

 6. Gradually add the dry ingredients to the wet mixture, mixing gently until smooth.

 7. Pour the batter into the prepared pan and level the surface.

 8. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

 9. Let the cake cool slightly, then cut and serve.
