Orange Loaf Cake
Ingredients
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) sugar
- 2 large eggs (room temperature)
- ½ cup (120ml) fresh orange juice
- 1 tablespoon orange zest
- ½ cup (120ml) milk
- 1 teaspoon vanilla extract
- Optional Orange Glaze
- 1 cup (120g) powdered sugar
- 2–3 tablespoons fresh orange juice
Instructions
Preheat your oven to 170°C. Grease and line a loaf pan with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Mix in the orange zest and vanilla extract.
Add the dry ingredients in batches, alternating with the milk and orange juice. Start and end with the dry ingredients. Mix gently until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled cake.
