Decadent Mint Chocolate Chip Layer Cake

Ingredients:

  • For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

  • For the Mint Buttercream:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup mini chocolate chips

  • For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped

Directions:

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until well combined.

Carefully add the boiling water to the batter and mix on low speed until well combined. The batter will be thin.

Divide the batter evenly among the prepared cake pans.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

For the mint buttercream, beat the butter until creamy. Gradually add powdered sugar, beating until well combined.

Add heavy cream, peppermint extract, and green food coloring (if using) and beat until fluffy. Fold in mini chocolate chips.

For the chocolate ganache, heat the heavy cream in a small saucepan until it begins to simmer. Remove from heat and add chopped chocolate. Let sit for 5 minutes, then stir until smooth.

To assemble the cake, place one cake layer on a serving plate. Spread a layer of mint buttercream over the cake. Repeat with the second and third layers.

Pour the chocolate ganache over the top of the cake, letting it drip down the sides.

Decorate with extra chocolate chips or mint leaves if desired.
